Seat of the Pants Cooking, Summer edition

  It’s been a couple of years since I’ve posted about my ‘Seat of the Pants’ cooking style. Since the last post, I’ve gotten a new slow cooker and I find them more useful in the heat of the summer than the winter.     In cold winter months, I’d rather have a roast in the oven that fills the house with an aroma that makes your mouth water. Christmas Memories

  Christmas is upon us. I’ve had a lifetime of dealing with good ones and bad ones.   With the revolving door of father’s in my life growing up, you never really knew what Christmas would bring and, I’m not just talking about presents. Up until the age of five, it was my grandparents who filled in the Santa role. My mother was on her third husband by then and since her second one didn’t want me living with them I lived with my grandparents. My father was long gone and I have no memory of Christmas with him. Seat of the Pants Cooking: Spaghetti Squash edition

  You may have seen the spaghetti squash lasagna recipe floating around Facebook recently. I saved it and gathered the ingredients to make it. You were supposed to cook the squash and scrape out the ‘spaghetti’ part, mix it with ricotta cheese and a bag of baby spinach then layer it back into the shell with spaghetti sauce and mozzarella cheese. I tried it and thought it was good but, it would be better without putting it back in the shell. It makes a cute presentation in the shell but, you can’t fit everything in there. So, I decided to

October is for Nesting

  It’s been over 2 weeks since my last post. I feel bad about that. I’ve never been good at keeping a tight schedule when left to my own devices. A lot of the time was spent preparing for NaNoWriMo, which could possibly be cheating, but I needed to get some clarity with where I’m going with the book. My Sincere Apology to The Pioneer Woman

  I must apologize to Ree Drummond, The Pioneer Woman. I bastardized her Italian Meatloaf recipe last night, in so many ways, with my ‘seat of the pants’ cooking style, I’m almost ashamed. Almost.
